These Curried Egg Rolls offer an exciting and flavourful twist on the classic appetiser. By infusing a simple vegetable filling with aromatic curry powder and a hint of spice, this recipe bridges Asian and Indian-inspired flavours to create something wonderfully unique and memorable. They are a fantastic way to use up vegetables you have in the fridge.

The beauty of this recipe lies in its simplicity and adaptability. The raw vegetable filling is allowed to marinate briefly in the seasonings, which not only develops the flavour but also helps to keep the vegetables crisp even after cooking. For a more substantial filling, you could also add cooked minced chicken, pork, or crumbled tofu to the vegetable mix.

While deep-frying gives these egg rolls their classic shatteringly crisp texture, the recipe also offers a healthier baked alternative. Simply brushing them with oil and baking them in a hot oven results in a golden, crunchy wrapper with significantly less oil. These are perfect served hot with a sweet chilli dipping sauce or a simple soy-ginger dip.

  • 2 cups shredded cabbage
  • Egg roll wrappers
  • 2 tsp curry powder
  • 1 tbsp soy sauce
  • 2 spring onions, finely sliced
  • 1 tsp sriracha
  • 1 tsp garlic paste
  • 1/2 tbsp fresh lime juice
  • 1/2 tsp ginger powder
  • Oil, for frying

Method

  1. In a large bowl, combine the shredded vegetables with all the seasonings (curry powder, soy sauce, spring onions, sriracha, garlic paste, lime juice, and ginger powder). Let the mixture rest for about 20 minutes to allow the flavours to develop and meld.
  2. Place about 2-3 tablespoons of the filling onto each egg roll wrapper and fold tightly according to the package directions.
  3. Fry in batches of 2-4 (depending on the size of your pot) in hot oil until golden and crisp. For a healthier version, brush the rolls with oil and bake at 180°C (350°F) until golden brown on both sides, flipping halfway through.
