- Ligar o forno a 220 ºC.
- Noutro tacho, colocar a cebola picada, o azeite e o sal. Deixar refogar.
- Juntar os cogumelos e ir mexendo. Juntar o vinho branco.
Sweet Potato and Mushroom Tart
A comforting, wholesome, and effortless dish suitable for any weekday meal. This crustless tart balances the natural sweetness and tender texture of sweet potato with a rich, savoury mushroom sauté seasoned with Worcestershire sauce and herbs. Finished in a hot oven to achieve an appetising golden top, it makes an ideal light vegetarian main or a flavourful side dish.
Ingredients
- 300g fresh mushrooms
- 1 small onion
- Olive oil, to taste
- 3 tbsp white wine
- 1 tbsp Worcestershire sauce
- 1 tsp Vaqueiro margarine with garlic and 3 peppers
- Salt and thyme, to taste
- 2 sweet potatoes
Preparation
- Heat a pan filled with plenty of water and, once it starts boiling, add the potatoes.
- Preheat the oven to 220°C.
- In another pan, add the chopped onion, olive oil, and salt. Leave to sauté.
- Add the mushrooms and stir occasionally. Add the white wine.
- Once you feel the alcohol has evaporated, add the Worcestershire sauce and the Vaqueiro.
- Cook for about 5 minutes and transfer into a tart dish.
- Remove the potatoes from the water, slice into thin strips with a good knife, and arrange over the mushrooms.
- Brush with a little olive oil and sprinkle with dried thyme.
- Bake in the oven until golden brown.
Notes
The original recipe does not specify boiling time or whether the sweet potatoes should be peeled before or after boiling. It is recommended to simmer them for roughly 12 to 15 minutes until just tender, ensuring they remain firm enough to slice neatly without falling apart.
“Vaqueiro com alho e 3 pimentas” is a Portuguese brand of garlic-and-peppercorn flavoured culinary margarine. If unavailable, use butter or a plant-based spread combined with 1 minced garlic clove and a pinch of crushed mixed peppercorns.
Traditional Worcestershire sauce contains anchovies; if cooking for vegetarians, ensure you use a certified vegetarian/vegan Worcestershire sauce.
Serves 4, requiring approximately 15 minutes of preparation time plus 10 minutes in the oven.
