Preparação

  1. Desenrole a massa (esta é a parte mais trabalhosa…:)), e com a ajuda de um corta-massa, copo, chávena ou o que tiver à mão, vá cortando pequenos círculos.
  2. Por cima, vá colocando molho de tomate (confesso, foi mesmo de um frasquinho daqueles já prontos) e depois vem a parte mais criativa, conforme os gostos e aquilo que tiver no frigorífico. No meu caso: fiambre, camarões, cogumelos, ananás, milho, azeitonas e claro o indispensável queijo mozzarella.
  3. Vai ao forno num tabuleiro (aproveitando o papel vegetal que já vem como o rolo da massa) cerca de dez minutos. Polvilhe com oregãos e bom apetite!

It’s the perfect opportunity to use up those little bits and pieces you have in the fridge—that last bit of cheese, a few stray olives, a handful of mushrooms. Don’t be afraid to experiment! The author went for a classic combination, but you could try anything from a spicy pepperoni to a simple margherita. You could even set up a “pizza station” with various bowls of toppings and let your guests build their own.

Ingredients

  • 1 roll of ready-made pizza dough

Method

  1. Unroll the dough (this is the most challenging part… just kidding!) and, using a cookie cutter, a glass, a mug, or whatever you have on hand, cut out small circles.
  2. Spread a little tomato sauce on top of each circle (confession: the author used a jar of ready-made sauce). Now comes the most creative part, depending on your tastes and what you have in the fridge. The author’s choices were: ham, prawns, mushrooms, pineapple, sweetcorn, olives, and of course, the essential mozzarella cheese.
  3. Place the mini pizzas on a baking tray (using the baking paper that comes with the dough roll) and bake in a preheated oven at 200°C (180°C Fan / Gas Mark 6) for about ten minutes, or until golden and bubbly. Sprinkle with oregano and enjoy!

Tips:

  • For a crispier base, pre-bake the dough circles for 3-4 minutes before adding your sauce and toppings.
  • Don’t be afraid to try different sauce bases, like green pesto, red pesto, or even a BBQ sauce.
  • Less is more! Try not to overload your mini pizzas with too many toppings, as this can make the base soggy and prevent it from cooking properly.
  • For a touch of freshness, add some fresh basil leaves or rocket after the pizzas come out of the oven.
