For the ultimate fudgy treat, here is the English version of this recipe.

Dark Chocolate, Walnut, and Blackberry Brownies

This recipe is a masterclass in what makes a brownie truly irresistible: a rich, fudgy texture, intense chocolate flavour, and the perfect balance of complementary additions. Here, the classic pairing of dark chocolate and crunchy walnuts is elevated by the addition of juicy blackberries. Their tartness cuts through the richness beautifully, adding a bright, fruity burst to every bite.

The key to achieving that perfect, gooey centre is to slightly underbake the brownie. You’re looking for the point where the top is set and has a light crust, but the middle is still soft and wobbly. The brownie will continue to cook from the residual heat as it cools, resulting in that dense, moist texture that is the hallmark of a great brownie. Don’t be tempted to leave it in the oven for longer, as that will result in a drier, more cake-like texture.

These brownies are fantastic for making ahead of time; in fact, their flavour and texture often improve after a day in the fridge, making them even fudgier. Serve them just as they are, or warm them up slightly and pair with a scoop of vanilla ice cream for a truly decadent dessert.

Ingredients

  • 125g dark chocolate
  • 150g butter
  • 3 eggs
  • 100g walnuts
  • 200g blackberries
  • 100g plain flour
  • 1 tsp baking powder
  • 120g caster sugar

Method

  1. Preheat the oven to 180°C.
  2. Start by melting the chocolate and butter together in a heatproof bowl set over a pan of simmering water (a bain-marie).
  3. In a separate bowl, beat the eggs and sugar together, then add this to the melted chocolate mixture.
  4. Sift in the flour and baking powder and gently fold to combine.
  5. Grease a baking tray or brownie pan with butter and pour in the mixture.
  6. Scatter the blackberries and walnuts over the top of the batter and bake for 20 to 25 minutes. The key is to remove the brownie when the surface is cooked, but it still feels slightly soft and gooey to the touch[3].
  7. Let it cool for about 30 minutes before serving.
  8. If you wish, you can make this the day before and leave it in the fridge to serve the next day.
