Honey Soy Prawn and Chicken Skewers

These prawn and chicken skewers are the epitome of effortless, flavour-packed cooking, making them an absolute star for any barbecue, garden party, or even a quick weeknight dinner. The simple yet potent marinade combines the salty, umami depth of soy sauce with the floral sweetness of honey, brightened by a sharp kick of fresh lemon and garlic. This combination works beautifully to tenderise the chicken and complement the natural sweetness of the prawns.

When grilled, the marinade creates a beautiful, sticky glaze that caramelises over the heat, resulting in a delightfully charred and flavourful exterior. This dish is incredibly versatile; you could add chunks of bell pepper, red onion, or pineapple to the skewers for extra colour and flavour. For a bit more heat, a finely chopped red chilli or a pinch of chilli flakes can be added to the marinade.

Ingredients

  • 20 medium-sized prawns, peeled and deveined
  • 1 chicken breast
  • Juice of one lemon
  • 1 clove of garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp honey

Method

  1. Cut the chicken breast into bite-sized cubes and place them in a bowl. Add the cleaned prawns and the rest of the marinade ingredients (lemon juice, garlic, soy sauce, and honey).
  2. Stir everything together to ensure the chicken and prawns are well-coated. Let it marinate for at least 20 minutes to allow the flavours to infuse.
  3. Thread the marinated chicken and prawns onto skewers.
  4. Grill or barbecue the skewers over a medium-high heat until the chicken is cooked through and the prawns turn opaque and pink. Serve immediately.
