Marble Cake
A beloved classic across the world, the marble cake, or bolo marmorizado, is a simple yet visually striking bake that’s a favourite in many Portuguese homes. Its charm lies in the beautiful swirls of vanilla and chocolate batter, ensuring that no two slices are ever exactly the same. It’s a wonderfully straightforward recipe that produces a light, moist cake, perfect for an afternoon snack or a school bake sale.
The key to a perfect marble effect is not to over-mix the two batters once they are in the tin. A few gentle swirls with a skewer or a fork are all you need to create the distinct patterns. Over-mixing will cause the colours to blend into a uniform, pale brown, losing the beautiful marbled design.
This cake is delightful on its own, but you can easily elevate it. For a richer chocolate flavour, use good quality unsweetened cocoa powder instead of a drinking chocolate mix. A simple dusting of icing sugar is the traditional finish, but a light chocolate glaze or a simple vanilla icing would also be a delicious addition.
Ingredients
- 200g plain flour
- 100g caster sugar
- 100g butter, softened
- 3 large eggs
- 60ml milk
- 50g cocoa powder (or Nesquik for a milder taste)
- 1 sachet of baking powder (approx. 2 teaspoons)
Method
- Using an electric mixer, cream the softened butter and sugar together until pale and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the milk, then gently fold in the flour and baking powder until just combined.
- Grease and flour a loaf tin. Pour half of the plain batter into the prepared tin.
- Mix the cocoa powder into the remaining half of the batter. Pour this chocolate batter over the plain batter already in the tin. Using a fork or a skewer, gently swirl the two batters together a few times to create a marbled effect.
- Bake in a preheated oven at 180°C (170°C for a fan oven) for about 40 minutes, or until a skewer inserted into the centre of the cake comes out clean.
