Moist Apple Cake
This Moist Apple Cake is the epitome of comforting home baking. It’s a beautifully simple, oil-based cake which guarantees a wonderfully soft and moist crumb that stays fresh for days. The classic combination of sweet apples, warm cinnamon, and crunchy walnuts makes it a timeless favourite, perfect for an afternoon treat with a cup of tea or coffee.
The clever technique of layering the batter with the apple and nut mixture is what makes this cake extra special. Instead of simply mixing everything together, this method creates a delightful ribbon of tender, spiced apple running through the centre. This ensures every slice is packed with fruity flavour and a lovely texture.
This cake is delicious served just as it is, perhaps with a simple dusting of icing sugar as the recipe suggests. For a more decadent dessert, serve a warm slice with a scoop of vanilla ice cream or a dollop of thick cream. While walnuts add a lovely earthy crunch, you could easily substitute them with pecans or even some chopped almonds for a different twist.
Ingredients (Serves 5)
- 3 apples (e.g., Granny Smith or Braeburn)
- 250g caster sugar
- 1 tsp ground cinnamon
- 3 large eggs
- 100ml vegetable oil
- 200g plain flour
- 1 tsp baking powder
- 50g chopped walnuts
- Margarine or butter, for greasing
- Flour, for dusting
Method
- Peel the apples, cut them in half, remove the cores, and cut them into thin half-moon slices or small cubes. Place them in a bowl, add 50g of the sugar and the cinnamon, and mix gently to coat.
- Preheat the oven to 180°C (160°C Fan / Gas Mark 4). Grease a baking tin (a rectangular or square tin works well) with margarine or butter and dust it with flour.
- In a large bowl, beat the eggs very well with the remaining 200g of sugar and the oil. Then, sift in the flour and baking powder and beat well until you have a smooth batter.
- Pour half of the batter into the prepared tin. Spread the apple mixture and any accumulated juices over the batter, sprinkle with the chopped walnuts, and carefully cover with the rest of the batter.
- Bake for 45 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool completely before serving.
Tip: Serve the cake dusted with icing sugar and cut into squares or slices.
