Ingredientes (6 Pessoas)

  • 300 gr de farinha
  • 1 colher de café de fermento em pó
  • 2 dl de leite
  • 2 ovos
  • 5 colheres de sopa de azeite
  • sal
  • pimenta
  • 350 gr de delícias do mar
  • salsa
  • óleo para fritar

Preparação

  1. Deite a farinha e o fermento para uma tigela, junte o leite, os ovos e o azeite, tempere com sal e pimenta e mexa bem.
  2. Adicione depois as delícias do mar cortadas em pedacinhos e salsa picada a gosto e envolva bem.
  3. Leve uma fritadeira ao lume com óleo abundante e deixe aquecer.
  4. Com uma colher de sopa, retire porções da mistura anterior, junte-as à fritadeira e deixe-as fritar de ambos os lados, até ficarem douradinhas.
  5. Retire-as, deixe-as escorrer sobre uma folha de papel de cozinha e depois sirva-as acompanhadas com salteado de legumes (courgete, cogumelos e pimentos) ou, se preferir, com arroz.

Sugestão: Ao fazer o polme, acrescente mais farinha, se necessário, para obter melhor consistência.

Pataniscas are one of Portugal’s most beloved fritters, traditionally made with salted cod (bacalhau). This recipe offers a wonderfully quick and modern take on the classic, swapping out the cod for surimi sticks (known in Portugal as delícias do mar or “delights of the sea”). The result is a light, flavourful fritter that comes together in minutes, perfect for a speedy weeknight dinner or a tasty appetiser.

The batter is incredibly simple, creating a soft, almost pancake-like fritter that puffs up when fried. The olive oil in the batter adds a touch of classic Portuguese flavour and richness. The chopped surimi sticks provide a subtle, sweet seafood taste, while fresh parsley adds a burst of colour and freshness to every bite. They are incredibly moreish and satisfying.

These fritters are fantastic served as a main course with sautéed vegetables (courgette, mushrooms, and peppers are great choices) or a simple rice side dish. They also work beautifully as a petisco (a Portuguese appetiser) served with a squeeze of fresh lemon juice or a garlic mayonnaise (aioli) for dipping.

Ingredients (Serves 6)

  • 300g plain flour
  • 1 tsp baking powder
  • 200ml milk
  • 2 eggs
  • 5 tbsp olive oil
  • Salt
  • Freshly ground black pepper
  • 350g surimi sticks (seafood sticks)
  • Fresh parsley
  • Vegetable oil, for frying

Method

  1. In a bowl, combine the flour and baking powder. Add the milk, eggs, and olive oil. Season with salt and pepper and mix well to form a smooth batter.
  2. Chop the surimi sticks into small pieces and finely chop the parsley to taste. Add them to the batter and stir until well combined.
  3. Heat a generous amount of oil in a deep frying pan or fryer.
  4. Using a tablespoon, drop portions of the batter into the hot oil. Fry on both sides until golden brown and cooked through.
  5. Remove the fritters with a slotted spoon and drain them on a sheet of kitchen paper.
  6. Serve hot with sautéed vegetables or rice.

Tip: When making the batter, add a little more flour if necessary to achieve a thicker, spoonable consistency.
