Crispy Pears with Brie Cheese
Elevate your appetizer game with these exquisite Crispy Pears with Brie Cheese. This dish is a harmonious blend of textures and flavours: the sweet, juicy pears meet the creamy, rich Brie cheese, all encased in a delicate, crispy filo pastry. Enhanced with the subtle warmth of pink peppercorns and the nutty crunch of toasted pine nuts, it’s a gourmet bite that’s surprisingly easy to make and guaranteed to impress.
The beauty of this recipe lies in its elegant simplicity. It combines classic pairings—fruit and cheese—with a delightful twist. The individual filo rolls make for perfect portion control and a charming presentation. They’re ideal for entertaining, whether as a sophisticated starter at a dinner party or as a unique addition to a cheese board.
For an extra layer of flavour, consider experimenting with different cheeses, such as goat cheese for a tangier profile, or even a smoked cheddar for a deeper, more savoury note. The suggested lime and ginger mayonnaise accompaniment offers a fantastic counterpoint to the richness of the rolls, adding a fresh, zesty kick that brightens the entire dish. Don’t be afraid to adjust the sweetness of the honey glaze or the amount of pink peppercorns to suit your personal preference.
Ingredients
- 2 pears, peeled and diced into small cubes
- 5 sheets of filo pastry
- 150g butter
- 1 onion, finely chopped
- 1 tablespoon honey
- 50g pine nuts
- 1 teaspoon pink peppercorns
- 100g Brie cheese
Preparation
- Heat a small frying pan over medium heat. Add the pine nuts and toast them lightly until golden brown. Set aside.
- In a separate frying pan, melt 1 tablespoon of butter. Add the finely chopped onion and sauté until translucent. Add the diced pears and pink peppercorns, and cook for a few brief minutes until slightly softened. Remove from heat and set aside to cool.
- To prepare the filo rolls, start by cutting each sheet of filo pastry into 4 equal parts. You will use 2 pieces for each roll. Brush the filo pastry with melted butter.
- At one end of the filo pastry, place a teaspoon of the pear filling, a small portion of the toasted pine nuts, and a cube of Brie cheese. Fold the end over, then fold both sides towards the centre, and roll tightly until you reach the end of the pastry.
- In a small bowl, mix the honey with the remaining melted butter. Brush the prepared filo rolls with this honey-butter mixture. Bake in a preheated oven at 180°C (160°C Fan/Gas Mark 4) until golden and crispy. Serve immediately, ideally accompanied by a lime and ginger mayonnaise.
