For a scoop of pure, refreshing delight, here is the English version of this recipe.

Green Apple Ice Cream

Green apple isn’t a flavour you often find in the ice cream aisle, but its bright, tangy taste is incredibly refreshing, making it a perfect summer treat. This simple recipe creates a wonderfully creamy and smooth ice cream that beautifully balances the tartness of the apples with the richness of a classic dairy base.

The secret to capturing the delicate apple flavour is to gently heat the grated fruit with the milk and cream, infusing the custard base with a fresh, zesty character. Unlike a sorbet, this is a true ice cream with a luxurious texture. Best of all, it’s designed as a no-churn recipe, meaning you can achieve a delicious result even without an ice cream maker. For the most pronounced flavour, use a sharp variety like Granny Smith.

Ingredients

  • 150ml semi-skimmed milk
  • 125g caster sugar
  • 200ml double cream
  • 450g green apples (such as Granny Smith)

Method

  1. In a saucepan, combine the milk, sugar, and double cream.
  2. Wash, peel, and grate the apples, then add them to the saucepan.
  3. Heat the mixture gently, but turn off the heat as soon as it begins to come to a boil.
  4. Set aside for 15 minutes to allow the flavours to infuse.
  5. Blend the mixture thoroughly with an immersion blender until very smooth. Allow the mixture to cool completely, then pour it into a freezer-proof bowl or container.
  6. If you prefer, you don’t necessarily need an ice cream maker for this recipe. You can simply leave it to freeze until it’s ready to serve, and it will still be beautifully creamy.
  7. If you choose to use an ice cream maker, follow the manufacturer’s instructions.
