Ingredientes

  • Farinha de 500 g
  • 3 xícaras de leite de coco
  • Açúcar 500g
  • 3 ovos

Preparação

  1. Bata os ovos até engrossar. Adicione os ingredientes restantes e misture bem para formar uma massa consistente, não muito grossa, nem muito aguada.
  2. Aqueça um grelhador plano. Lubrifique bem nos dois lados. 3. Deite uma colher de massa sobre o grelhador e feche a parte de trás. Grelhar sob carvão. 7 minutos de cada lado.
  3. Abra o aceso e enrole rapidamente antes de esfriar.
  4. Guarde em recipiente hermético.

Dicas: O grelhador plano é um clipe de metal fino redondo de dois em conjunto, parecendo um enorme tong.

These incredibly thin, crispy rolled wafers get their name from the idea that messages of love were once secretly passed within them. They are made using a special decorative mould that imprints beautiful patterns onto the wafer as it cooks.

This recipe uses a simple batter of coconut milk, sugar, flour, and eggs. The traditional cooking method, as mentioned in the original recipe, involves using a special double-sided griddle or mould over a charcoal fire, which imparts a unique smoky aroma. The key is to work quickly, as the wafers must be rolled into their signature cigar shape the moment they come off the heat, before they have a chance to cool and harden.

While they require a bit of practice, the result is a wonderfully light, fragrant, and crispy cookie that is well worth the effort. They are naturally dairy-free and store beautifully in an airtight container, making them a perfect gift or a lovely treat to have on hand for guests. For a different flavour profile, you could infuse the batter with a touch of pandan or vanilla extract.

  1. Beat the eggs until they are thick and pale. Add the remaining ingredients and mix well to form a smooth batter that is not too thick, nor too watery.
  2. Heat a special flat wafer iron or mould. Grease both sides well.
  3. Pour a spoonful of the batter onto the mould and clamp it shut. Cook over hot coals (or a stovetop burner) for about 7 minutes on each side, or until golden and crisp.
  4. Open the mould and quickly roll the hot wafer into a tight cylinder before it cools and hardens.
  5. Store in an airtight container once completely cool.

Tip: The traditional flat griddle is a type of round, thin metal clamp, joined together like a pair of long tongs, used specifically for making these wafers.
