Marble Cake

A beloved classic across the world, the marble cake, or bolo marmorizado, is a simple yet visually striking bake that’s a favourite in many Portuguese homes. Its charm lies in the beautiful swirls of vanilla and chocolate batter, ensuring that no two slices are ever exactly the same. It’s a wonderfully straightforward recipe that produces a light, moist cake, perfect for an afternoon snack or a school bake sale.

The key to a perfect marble effect is not to over-mix the two batters once they are in the tin. A few gentle swirls with a skewer or a fork are all you need to create the distinct patterns. Over-mixing will cause the colours to blend into a uniform, pale brown, losing the beautiful marbled design.

This cake is delightful on its own, but you can easily elevate it. For a richer chocolate flavour, use good quality unsweetened cocoa powder instead of a drinking chocolate mix. A simple dusting of icing sugar is the traditional finish, but a light chocolate glaze or a simple vanilla icing would also be a delicious addition.

Ingredients

  • 200g plain flour
  • 100g caster sugar
  • 100g butter, softened
  • 3 large eggs
  • 60ml milk
  • 50g cocoa powder (or Nesquik for a milder taste)
  • 1 sachet of baking powder (approx. 2 teaspoons)

Method

  1. Using an electric mixer, cream the softened butter and sugar together until pale and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the milk, then gently fold in the flour and baking powder until just combined.
  2. Grease and flour a loaf tin. Pour half of the plain batter into the prepared tin.
  3. Mix the cocoa powder into the remaining half of the batter. Pour this chocolate batter over the plain batter already in the tin. Using a fork or a skewer, gently swirl the two batters together a few times to create a marbled effect.
  4. Bake in a preheated oven at 180°C (170°C for a fan oven) for about 40 minutes, or until a skewer inserted into the centre of the cake comes out clean.
