  • 500g de morangos

Preparação

  1. Lavar os morangos e os mirtilos (guardar alguns para o fim), colocá-los no copo alto, adicionar o açúcar em pó e triturar tudo com a varinha mágica até ficar desfeito.
  2. Em taças separadas, bater as natas e as claras em castelo. Misturar e envolver bem as claras, natas e mistura de morangos.

The combination of sweet strawberries and slightly tart blueberries provides perfect balance, whilst the addition of whipped cream and beaten egg whites creates an exceptionally smooth, airy texture that’s far superior to any shop-bought alternative.

What makes this ice cream particularly special is its natural approach – the fruit provides all the colour and most of the sweetness, requiring only a modest amount of icing sugar to enhance the natural flavours. The technique of folding in both whipped cream and beaten egg whites creates a luxuriously light texture that doesn’t become icy when frozen. Save a few perfect berries for garnishing – they add a beautiful finishing touch and a burst of fresh flavour with each spoonful.

Ingredients

  • 150g icing sugar
  • 500g strawberries
  • 50g blueberries
  • 200ml double cream (for whipping)
  • 1 egg white

Method

  1. Wash the strawberries and blueberries (save some for the end), place them in a tall jug, add the icing sugar and blend everything with a hand blender until smooth.
  2. In separate bowls, whip the cream and beat the egg whites to stiff peaks. Mix and fold the whites, cream and strawberry mixture together well.
  3. Place in an ice cream maker following the manufacturer’s instructions.
