Cassava Cake
Cassava cake is a beloved dessert in many parts of the world, especially in Brazil and Southeast Asia. Unlike light and airy sponge cakes, this treat is known for its distinctively moist, dense, and slightly chewy texture, which comes from the starchy cassava root. This recipe is a wonderfully simple, naturally gluten-free version that celebrates the tropical flavours of cassava and coconut.
The beauty of this cake lies in its simplicity, but it’s also very adaptable. While this version is minimalist, many variations include eggs, butter, and condensed or evaporated milk for a richer, more custardy result. For the best texture, use fresh or frozen grated cassava, squeezing out any excess liquid before mixing. You can also try adding a teaspoon of vanilla extract for extra aroma or sprinkle the top with a little extra sugar before baking for a slightly crisp crust.
This cake is delicious served warm on its own, perhaps with a cup of coffee or tea. It keeps well at room temperature and, like many such cakes, the flavours often deepen and taste even better the following day.
Ingredients
- 1 pack grated cassava (approx. 400g)
- 1/2 cup coconut milk

- Mix all the ingredients together in a bowl, then pour the mixture into a greased baking dish.
