Eggless Blender Cake
This cake is the ultimate “emergency bake” — a recipe so simple and quick, it feels like magic. Its biggest claim to fame is that it contains no eggs, making it perfect for those moments when the craving for cake strikes but the egg carton is empty. As the name suggests, everything can be whizzed together in a blender (or a bowl with a mixer), creating a smooth batter in seconds.
The use of oil instead of butter guarantees a wonderfully moist and tender crumb that stays fresh for days. It’s a simple, light vanilla cake that is delicious on its own but also serves as a fantastic blank canvas for your creativity. It’s the kind of reliable, no-fuss recipe every home baker should have in their collection.
Feel free to adapt this recipe to your liking. For a chocolate version, simply sift in a few tablespoons of cocoa powder with the flour. You could also add the zest of a lemon or orange for a bright, citrusy flavour, or fold in chocolate chips or chopped nuts before baking. A simple lemon icing or a dusting of icing sugar is all it needs to finish.
Ingredients (Serves 6)
- 1 cup caster sugar
- 2 cups plain flour
- 2 cups milk
- 3/4 cup vegetable oil
- 1 1/2 tsp baking powder
- 1 dessertspoon vanilla extract
- 1 pinch of salt
- Butter, for greasing
- Flour, for dusting
Method
- Preheat the oven to 180°C (160°C Fan / Gas Mark 4).
- Grease a bundt or ring tin with butter and dust it with flour.
- Sift the flour, sugar, baking powder, and salt into a large bowl. Add the milk, oil, and vanilla extract. Beat with a wooden spoon or an electric mixer until the batter is smooth. Alternatively, place all ingredients in a blender and blend until smooth.
- Pour the batter into the prepared tin and bake for 35 to 40 minutes, or until a skewer inserted into the centre comes out clean.
